Mike's Poor Man's Lobster
- 2 pounds fresh cod fillets
- 2 sticks of butter
- 1/4 cup sugar
- 1/4 cup salt
- 1 full squeeze lemon, or juice
- 5 cups water
- Rosemary or Garlic Salt
DIRECTIONS:
Rinse off fish fillets and cut into large lobster size chunks pieces. Using a medium size pot add the 5 cups of water and bring to a boil. Once water is boiling add in 1/4 stick of butter, sugar, salt and lemon (or lemon juice). Using a small sauce pan add in the remaining 1 3/4 sticks of butter and melt down the butter.
With water boiling and all the ingredients added, drop in the boiling water a few cod fillets. Don't drop in too many that the fillets are touching. Cook in boiling water until fillets are floating on surface. Fillets should have a nice white flaky finish. That ensures that the fish is fully cooked. Skim off fillets and drain off excess water. Serve with melted butter and rosemary or garlic salt. Serves 6-8.
